CHOCOLATE CHIP BANANA LOAF
½ cup margarine
1 cup sugar
1 egg
3 ripe bananas, mashed
1 ½ cups Maverick spelt flour
½ teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup mini-chocolate chips
½ cup nuts (optional)
Preheat oven to 350 degrees F. Grease a 5 X 9 inch loaf pan. In small bowl, sift dry ingredients together. Set aside. In large bowl, cream butter and sugar. Beat in egg. Alternately stir in bananas and dry ingredients. Fold in chocolate chips and nuts. Pour into pan and bake for 50-55 minutes. Cool in the pan for 20 minutes, then remove to a wire rack to cool completely.
