APPLESAUCE CAKE ROLL

1 cup Maverick spelt flour                      3/4 teaspoon baking powder
3/4 teaspoon baking soda                       1/4 teaspoon salt
1/8 teaspoon allspice                              1/8 teaspoon nutmeg
1/2 teaspoon cinnamon                           3 eggs
3/4 cup sugar                                         1/2 cup applesauce

Grease a 10 X 15 X 1 inch jelly roll pan. Line with wax paper. Grease again and dust with flour. In small bowl sift dry ingredients together. Set aside. In large bowl beat eggs until thick and light. Gradually add sugar while continuing to beat eggs. Alternately fold in applesauce and dry ingredients. Bake at 350 degrees F for 15-18 minutes. Run a knife around the edge of the pan and invert on a towel sprinkled with powdered sugar. Roll up and cool. Unroll and spread with your choice of filling, (whipped cream, pudding, jelly, etc). Roll up and slice.
